Baby it’s cold outside!

We’ve had some unseasonably cold weather in our part of the world recently, so we celebrated with a fire and a little concoction we call “Baha in Winter”.

Start by making the St. Germain foam. Place the following in an ISI whipper:

  • 6 oz St. Germain
  • 2 oz water
  • 3 oz fresh lemon juice
  • 4 egg whites

Double charge and refrigerate for at least 2 hours before serving.

Fill a shaker tin with ice and add the following:

  • 1-1/2 oz Reposado Tequila (we used Corzo)
  • 1 oz Pomegranate Juice
  • 1-2 dashes of rhubarb bitters (Fee Brothers works well)
  • Splash (about 1/4 oz) of 2:1 simple syrup for mouth feel

Stir for 15-30 seconds

Fill a chilled cocktail glass approximately 2/3 full of foam, then strain the cocktail through the foam. This gives a nice creamy texture. If necessary, top with one more small squirt of foam.
